Healthy Peanut Butter French Toast Bake for One!
INGREDIENTS:
2 slices whole grain bread
1/2 cup egg substitute
a little unsweetened vanilla almond milk (or vanilla soy milk)
1 splenda packet
cinnamon to taste
splash of vanilla
1 tablespoon peanut butter (or almond butter, sun butter, etc.!)
1 banana (sliced)
PROCEDURE:
Beat together the egg substitute, almond milk, splenda, cinnamon and vanilla.
Dip one slice of bread in mixture. Completely soak both sides.
Place bread in ramekin sprayed with nonstick cooking spray.
Top bread with peanut butter and 1/2 of the banana slices.
Dip other slice of bread in egg mixture. Make sure to let the bread soak up a lot of the mixture.
Place on top of banana slices.
Top with remaining egg mixture and other 1/2 of banana slices.
Bake at 375 for 20 minutes!
